Delicious Gluten-Free Rice Bread recipe



I´ve got this Gluten Free Rice Bread recipe from my mom a few days ago. Yesterday morning I soaked the rice and as soon as I got off work I prepared this recipe. I found it quick and easy!...  

The only thing to be prepared in advance is soaking the rice for at least 4 hours. If you leave it longer, it won´t hurt. Just don´t leave for too many hours. 4-6 would be fine.

Before you start, make sure you have these ingredients handy:  
  • 1 cup (240ml) rice soaked for 4 hours (drain the water out)
  • 4 eggs;
  • 1 whipping cream small carton (200g) OR 1 cup (240ml) coconut oil*;
  • 1/2 cup (120ml) olive oil;
  • 1 tsp (5ml) salt;
  • 1 pinch sugar or sweetener;
  • parsley-green onion-basil-black pepper (they´re optional);
  • 1 tbsp baking powder

*for the bread you see in the photo I used whipping cream.


 Put all the ingredients except for the baking powder into the blender and mix for a couple of minutes. Pour the mixture in a bowl and fold in the baking powder using a whisk. Preheat the oven at 375F. Line a non-stick pound cake or loaf pan with parchment paper. You can use some baking spray if you desire. Pour the batter inside the pan and take it to the oven for about 40 minutes or until a toothpick inserted in the middle comes out clean. If it´s golden brown on the top, it will be likely done. Remove from the oven and wait for it to cool off before you slice it. This is a nice alternative to a wheat bread, or in case you want to avoid gluten. The texture of this bread is more like a cake or a bread pudding, but the crust is somehow flaky and delicate. If you want, you can toast the slices using a griddle or grill and this is how it will look like:
