I´ve got this Gluten Free Rice Bread recipe from my mom a few days ago. Yesterday morning I soaked the rice and as soon as I got off work I prepared this recipe. I found it quick and easy!...
The only thing to be prepared in advance is soaking the rice for at least 4 hours. If you leave it longer, it won´t hurt. Just don´t leave for too many hours. 4-6 would be fine.
Before you start, make sure you have these ingredients handy:
- 1 cup (240ml) rice soaked for 4 hours (drain the water out)
- 4 eggs;
- 1 whipping cream small carton (200g) OR 1 cup (240ml) coconut oil*;
- 1/2 cup (120ml) olive oil;
- 1 tsp (5ml) salt;
- 1 pinch sugar or sweetener;
- parsley-green onion-basil-black pepper (they´re optional);
- 1 tbsp baking powder
*for the bread you see in the photo I used whipping cream.
